This past Easter weekend, I was on a bit of a roll in the kitchen after making Coconut, Mango and Cashew Protein Balls, so I decided to make this healthy Quinoa & Coconut Slice with raisins, blueberries and mixed nuts. It’s all the good stuff packed neatly into one little square of goodness.
Yep, picture sun going down over a sun soaked action packed Easter Monday and you have me buzzing about in the Kitchen, ingredients, pans, racks, spills and drips everywhere. In my kitchen I have a huge window over the sink and in the afternoon, the sun pours in and heats everything in its path, although it is nice to have the lovely view of the sky and water that goes with it.
Luckily I also have an island bench in my kitchen and I love it. This is where the serious work is done. I can spread everything out and get messy! About a year and a half ago we redid our entire kitchen, taking out the old one completely – it was two “L” shapes, quite weird and rather impractical, and replaced it with one “L” and a huge kickarse rectangle island.
I have decided I am definitely a kitchen island person, you know the way some people seem to be drawn to U shaped kitchens, or the galley style kitchen. I’ve decided any future kitchen I have MUST have an island, and a big one at that so I can be messy and make lots of things at once. Before we lived at the Sunshine Coast we lived in a house with a galley style kitchen which I thought at the time was good, but I am an island convert now.
But I do miss those awesome stainless steel benches in our previous house. It was kind of an industrial kitchen and the people who built the house installed stainless steel benchtops and backsplash and it was so easy to keep clean and was excellent for rolling pizza dough!
I do love my kitchen, but have you ever done a renovation that has been a first for you and whilst you’re happy with the end result, you immediately know if you had your chance over, there are lots of things you would change. This is me, but my kitchen as it is, now, is where magic happens and for that I am grateful and I know if I ever get the chance to do over another kitchen, I know exactly the things I would change, and the island would not be one of them!
This healthy quinoa and coconut slice is perfect for lunchboxes and snacks on the go, even after a gym workout. It has 7 grams of protein, contains no refined sugars is dairy free and will definitely keep you fuller for longer!
- 1 cup Cooked quinoa
- ½ cup Unsweetened shredded coconut
- 1 cup Mixed Nuts
- 1/3 cup Raisons
- ¾ cup Blueberries
- ¼ cup Pepitas
- ¼ cup Sunflower seeds
- 2 medium Bananas , mashed
- Preheat oven to 180 degrees C.
- In a food processor, place all ingredients except the banana
- Blitz until all combined
- In a separate bowl, mash the bananas and add to the food processor
- Blitz until all combined
- Spoon out and onto a small to medium baking tin lined with baking paper. Sprinkle additional nuts or seeds if you like and bake for 15 minutes in oven at 180 degrees C.
- Store slice in fridge in an air tight container for upto 5 days
- This slice is best left overnight in the fridge and eaten the next day. It will keep for upto 5 days in the fridge in an air tight container.
- Apricots may be used in place of raisins
- Mixed nuts could be a combination of walnuts, macadamias and cashews – that is what I used.
